On The Menu: Meatless Monday, Breakfast for Dinner.

Last week was pretty crazy and it was incredibly hard to meal plan (since my schedule was constantly in flux!). Whenever things get super busy…. I always go back to my absolute favorite: breakfast for dinner. It’s easy, it’s delicious, and it’s simple. SO, my Meatless Monday was organized around my favorite meal of the day!

Breakfast & Snack: I had an early morning spin class so I wanted to keep it light. If I eat too much before class I tend to get a stomach ache. I decided to eat 1/4 cup cashews for breakfast. Then, post-spin I ate a 0% greek yogurt with peaches.

Lunch: I ate out for lunch at one of my favorite restaurants with great vegan options: M Cafe. The Big Macro veggie burger is out of this world delicious. I forgot to take a picture of it (because I was in veggie burger heaven) so I snagged this picture off of their yelp page. I ate it with a side of seasonal vegetables. YUMYUMYUMYUM.

Snack: green juice made with kale, spinach, romaine, parsley, cucumber, celery, lemon and sea salt.

Dinner: egg white scramble with onions and daiya mozzarella cheese (the best dairy free cheese!), apple slices, and a brown rice cake with garlic jalapeno spread.

Dessert: blueberries with whipped cream

It was such a simple, delicious, and easy Monday meal plan! Next week, I have something new to share for Meatless Monday that I am so excited about! Until then, I hope you have an amazing Monday!

  1. I love spin classes in the morning! So refreshing and a great energy boost for the morning. Veggie burgers are so yummy too, that picture makes we want to have one for dinner tonight! Thanks so much for sharing!
