At the beginning of the year I decided to start “Meatless Monday!” I had heard a lot about the health benefits, environmental benefits, and humane benefits of picking just 1 day a week to avoid meat… and I wanted to try it. I did my first meatless Monday, last week, and decided to document the day.
Breakfast:
My standard breakfast: egg whites, daiya mozzarella cheese (the best dairy free cheese!), bell peppers, onions, avocado and fruit. Had this with a full bottle of water followed by a soy latte.
Snack: green juice made with kale, spinach, romaine, parsley, cucumber, celery, lemon and sea salt.
Lunch:
My absolute favorite: Shiitake Mushroom Vegetarian Sushi, Cauliflower with Onions, Peas, and Chili Flakes (which, I forgot to photo!)
Snack: about 1/4 cup cashews & a Fage 0% Greek yogurt with Peaches.
Dinner:
Zoodles! (Zucchini noodles) with Marinara Sauce.
Dessert: dairy free, sugar free, chocolate pudding. My current favorite desert.
I really liked my first “Meatless Monday” and am excited to keep this new routine going!
