Oh man. What. A. Week. The week kicked off with an INCREDIBLE business meeting that got me so pumped for our upcoming projects. Then, we celebrated a dear friends baby shower. Annnnnd my husband and I enjoyed a mid-week date night with some ridiculously delicious Italian food. Everything has been great, but the week definitely had a somber tone, since our beloved family dog, Bella, passed away. She was only with us for a short period of time but her love, intelligence, and excitement for life will stay with us forever. ❤

Last week was pretty crazy and it was incredibly hard to meal plan (since my schedule was constantly in flux!). Whenever things get super busy…. I always go back to my absolute favorite: breakfast for dinner. It’s easy, it’s delicious, and it’s simple. SO, my Meatless Monday was organized around my favorite meal of the day!
Breakfast & Snack: I had an early morning spin class so I wanted to keep it light. If I eat too much before class I tend to get a stomach ache. I decided to eat 1/4 cup cashews for breakfast. Then, post-spin I ate a 0% greek yogurt with peaches.
Lunch: I ate out for lunch at one of my favorite restaurants with great vegan options: M Cafe. The Big Macro veggie burger is out of this world delicious. I forgot to take a picture of it (because I was in veggie burger heaven) so I snagged this picture off of their yelp page. I ate it with a side of seasonal vegetables. YUMYUMYUMYUM.
Snack: green juice made with kale, spinach, romaine, parsley, cucumber, celery, lemon and sea salt.
Dinner: egg white scramble with onions and daiya mozzarella cheese (the best dairy free cheese!), apple slices, and a brown rice cake with garlic jalapeno spread.
Dessert: blueberries with whipped cream
It was such a simple, delicious, and easy Monday meal plan! Next week, I have something new to share for Meatless Monday that I am so excited about! Until then, I hope you have an amazing Monday!

This week has been a whirlwind! Anyone else?! The short week threw off my game and I wasn’t as productive as I would have liked. Every day was a struggle to complete my work and get everything together in time. I blame mercury in retrograde…. 😉
Even though it felt crazy most days, this week definitely had it’s highlights. I celebrated my mom’s birthday with a mother/daughter mani/pedi and dinner with my entire family. My husband and I booked a huge client for work and I was able to sneak off for a great spin class. I am really looking forward to this weekend and spending quality time with my husband and getting some much needed rest. Happy Friday!

Lately, I have been pretty obsessed with fringe. The movement of the outfit, the whimsical fun, how it can remind me of the 1920s in an instant and then take me right to present day music festivals… to me it’s such a diverse trend. I own a pair of fringe booties that I love but I have yet to incorporate fringe into my wardrobe. My wardrobe is pretty streamlined. I know what I like and don’t spend much time on “of the moment” pieces.
But… I just can’t get fringe out my mind!
So, I started my search at H&M since I knew I wanted cute and affordable items. What I discovered are two dresses and a sweater I adore and the cutest shoes that are a total dupe of my Sam Edelman “Louie” boots!
- Fringed Knit Dress. This dress could not be more perfect. It has the cutest fringe detailing but isn’t too “in your face”. Perfect for my comfort zone and every day wear.
- Dark Green dress with Fringe. A little thing about me: I am obsessed with this color. I think it is so unbelievably beautiful and whenever I see it on an item of clothing in this color… I immediately gravitate toward the piece! This dress is not only gorgeous but super fun. Perfect for a night out with the girls.
- Sweater with Fringe (on sale!) I have a serious obsession with sweaters. Like the first dress above, this is the perfect way for me to start to dipping my toes into the fringe-y waters. Subtle but cute and very easy to wear!
Finally, these fringed ankle boots from H&M are a perfect dupe for my favorite Sam Edelman “Louie” boots! It took me a legit year to pull the plunge on them (because I kept thinking… will I still like fringe?!) but when I couldn’t get them out of my head I bit the bullet. I’m so glad I did because I wear them all the time and receive the most compliments on them! These boots from H&M are the “Louie’s” twin! If you’ve been thinking about the “Louie” I would 100% suggest purchasing these H&M boots!

At the beginning of the year I decided to start “Meatless Monday!” I had heard a lot about the health benefits, environmental benefits, and humane benefits of picking just 1 day a week to avoid meat… and I wanted to try it. I did my first meatless Monday, last week, and decided to document the day.
My standard breakfast: egg whites, daiya mozzarella cheese (the best dairy free cheese!), bell peppers, onions, avocado and fruit. Had this with a full bottle of water followed by a soy latte.
Snack: green juice made with kale, spinach, romaine, parsley, cucumber, celery, lemon and sea salt.
My absolute favorite: Shiitake Mushroom Vegetarian Sushi, Cauliflower with Onions, Peas, and Chili Flakes (which, I forgot to photo!)
Snack: about 1/4 cup cashews & a Fage 0% Greek yogurt with Peaches.
Zoodles! (Zucchini noodles) with Marinara Sauce.
Dessert: dairy free, sugar free, chocolate pudding. My current favorite desert.
I really liked my first “Meatless Monday” and am excited to keep this new routine going!
Happy Friday! What a week… each day was so different. I got back into my fitness routine and tried to eat more greens. I enjoyed the best mid-week date night with my husband and finished an amazing book (What Alice Forgot… I would HIGHLY recommend it! One of my favorite Liane Moriarty books and I’ve almost read them all). I also had a great lunch with one of my closest girlfriends. Career-wise, I feel like my husband and I have been more productive than ever. I am so excited and feel so passionate about our upcoming projects!
The “pit” of the week has been my lack of sleep. I’ve been waking up in the middle of the night and as a result… I’m having a hard time waking up each morning. I take an 8:30am spin class and (ideally) would like to be up at 6:30am to give myself time in the morning. Before class I like to do my morning prayers, tidy the house, and get mentally prepared for the day ahead. This week I was pretty much waking up at 7:30 and running out the door (barely!) by 8 to make my class in time. Next week, I hope to be better with my a.m. routine.
